It figures. My lst post into this new world of Vox would be about FOOD or more specifically - what's for dinner?Who would think that their world... a very lilliputian one at that.... revolves around what one is preparing for dinner. Over the years, I think I only had about 20 truly Loral-specific recipes --- my spaghetti sauce, my stuffed shells, my meatloaf... ok... you get the idea. But now.... with no kids to criticize the unusual ingredient... or a husband raised in a small town in the Midwest on the Mississippi that had no Chinese restaurant (thank God he's opened up to food other than meat and potatoes)... I am experiencing complete and utter freedom in the choice of "what's for dinner." I think my husband returns home delighted that I've even fixed something,,,, there was a time there where I was DONE with cooking and he was on his own to forage for his meal. But once a cook.... I think always a cook. Now, I've dived into the pool of Food Network, Recipes.com, and countless magazines that show me I can cook like Giada and bake like Ina. I have now entered into the olympics of cooking... the triathalon of culinary experience.... cooking, baking AND grilling. Iron Chef, move over. In the past, it was impossible to really be a good cook and a baker..... and let alone a woman who grilled! So I have made THURSDAYS my day to experiment with an exceptional dinner.... and tonite's was: Seared Scallops over Bacon and Spinach Salad with Cider Vinaigrette. - March - Cooking Light. What a delightfully delicious and light meal... perfect for company... or the wonderful husband who will be surprised when he comes thru the door. Yep... it figures this would be about cooking. Nothing says love like a good meal (and a healthy one at that!). Try it... I don't think you'll be disappointed with either the meal... or the feeling of making something with love for someone else.
